You should use fine line tape, it's sold at most automotive paint stores. Tape off the area not to be painted with the fine line tape, then cover the rest of the truck with paper or plastice ...
Scuff the area with 400 to 600 grit paper or a scotch scuff pad. clean the area and then apply the paint. If you remove the tape while the paint is still flowing, usually 20~30 min, you can get a cleaner edge, but with fine line tape this shouldn't be a problem.
If you paint is a bit old, you can press the masking tape against your pant leg to remove some of the sticky stuff and this helps it to not pull up older paint.
You can wet sand, compound and polish the new paint, but remember that it's now taller than the old paint. You need to be careful not to wet sand too much as you might remove the stripe.
If your going to paint the whole truck with base coat / clear coat, you can paint the stripes after your primary color coat, then wet sand and clear.
If your just adding stripes to the current paint job then don't worry about the clear coat, it's not needed. Just get single stage paint for the stripes.
So what you are saying is to paint the whole truck one color without clear, wet sand it, tape off my stripelines, spray the colored stripes, then take off the tape lines and clear the whole thing.
That's the best way to do graphics on a full repaint. Lightly wetsand the edge of the graphic to remove any edge build and clear over everything. That way you'll have buried the graphics so you can color sand and buff without removing the graphic and it won't look like a vinyl sticker.
