You should be able to hit the two middle buttons at the same time and it'll reset. Can be a little tricky to hit them both simultaneously, but a couple of tries should do it.

I have a 99 EB and I APPEAR to be averaging 14.8 - 15.3 MPG. Mostly semi-highway +/- 60 all the way to the office. It took a few days for the average to get there, but it appears right judging by how often I fill my tank.
Make sure you give it a few days to get the average correct.
If you idle the engine for long periods of time, it will lower your average. I always reset it when I get on the highway for extended drives and don't pay much attention to it any other time. The computer must keep an overall "life of vehicle averege" for the miles to empty mode. If i reset the average fuel mileage and later fuel up, It still only reads about 330 miles to empty. When new it would go as high as 365 miles to empty. I think towing a travel trailer for about 25,000 miles has affected my overall miles to empty.....
The reset on avg mpg starts the averagin over from the moment you push the buttons.
I believe the 'miles to empty' resets itself as the fuel is consumed and the tank level drops. Pushing on the reset buttons doesn't change the mte reading, only the average mpg. If you don't reset at fillups, it will average both tanks together, and on, and on. Gradually, if you never reset the mpg, it will almost never vary more than a .2 either way.
If you watch the m-t-e while filling up, it will be going up as the tank fills based on the mpg you were getting when you pulled up to the station. 'Course if you leave the key on to watch the computer readout, it usually screws up the fuel gauge for awhile.
this has been my observations on my Fords for the last 7 years and driving f150s, Expeditions and Superduties--they computers I have had have always acted the same.
