The best thing to do is to wire up the headers on the inside of the engine compartmetn and lower the engine in from your hoist and slowly position the headers in place.
As far as gaskets, FelPro has a performance line, they have a steel core in them, and those won't leak. Do not use paper gaskets of any kind.

i used napa perfomance gaskets on my headers, they dont leak at all. and yea keep the headers in and lower the motor into the mounts and then bolt up the headers after the motor is in and attached to the bellhousing.
