I believe miles to empty is computed from the fuel consumption rate from the previous tank.
For example, if you were towing and getting 10 MPG then refilled your 38 gallon tank, the gauge should read 380 miles to empty. If you were unloaded and getting 15 MPG and refilled the same 38 gallon tank, it would read 570 miles to empty.
I don't believe the Distance To Empty is smart enough to recalculate based upon changing fuel consumption, at least not in my 2004 F-350's.
from the owner's manual (p-71 for 04 model): Fuel range. This function estimates approximately how far you can drive with the fuel remaining in your tank under normal driving conditions. Remember to turn the ignition OFF when refueling to allow this feature to correctly detect the added fuel.

DTE is calculated using a running average fuel economy, which is based on your recent driving history of 500 miles (800 km). This value is not the same as the average fuel economy display. The running average fuel economy is reinitialized to a factory default value if the battery is disconnected.
Thanks bnmccoy. The 500 mile history is why it was off after towing for 720 miles. It took another tank before the gauge started reading correctly again.
Mine also resets on the fly without shutting the truck off. Takes a few min but it does. I hardley ever shut my truck down at the pump. I drive 80 miles to to and from work a day and i live right around the corner from the station. I drive my truck the 40 some-odd miles home like any other, and i have been told over the years from different diesel owners that its better to leave it run the to shut it down and start it back up right away. My buddy has over 100k on his 7.3 filling up without shut down and i'm at 28K. I probably shut down 1 out of 10 or less then that. The lie-o meter actuly starts moving as its being pumped in. Takes a good few miles to get it up to where its supposed to be though. How do you "harpoon" the tank and where on it i would love to speed it up mine clicks at like 26 and i usually have to hold the handle at like 1/4 pressure to take it to 31 gallons. thanks sorry for the long post
