If I had one, I'd shoot for a little more than the 289 I built. Read the thread "302/upgrade options/questions" here, most are talking high 200 hp. But they are in the 8, 8.5 CR. Take it to 9 or 9.5 for a little more.
Mostly, I'd make sure the reciprocating and valve train would take the revs and the loads, and that way I'd feel better flogging it when I wanted.
