It should work fine and keep the temper/blood pressure down.
I have the cheap ($40) adapter 1" mount, my jack has a 1-3/16" hole so I made a sleeve out of PVC pipe and it's very solid. With the long headless bolts and the angle set right, you can roll the tranny right in.

If you think it will only take a day try checking rental shops in your area. I rented a floor type transmission jack for $28/day when I pulled my transmission.
That's a thought -- but I live about 65 miles from any rental places; my shop is nearly 50 from same, and I expect I'll be doing more transmissions one of these days. If that $59.99 Harbor Freight scissors type trans jack will do the job, it's not TOO much more than a rental.
We did get the trans out of my pickup OK, using my floor jack and some plywood shims. I want to have a trans jack by the time I put it back in, though.
