drivetrain shunt
I just purchased a 2003 Ranger 2.3ltr reg cab with 11,500 miles on it, when you take your foot off the gas then step on the gas again the truck jolts, it feels like either the engine mounts are gone (on 11k doubt it !!) or slack in the drive shaft, I took it to a ford dealer and the could not find a problem and said it was common for the small engines to do this, anybody else had this problem?

Sounds like the infamous "driveline clunk" to me. Not sure if your Ranger has the same kind of driveshaft as mine, but I would still suspect that the slip yolk splines need to be lubed. Haynes Manual has a pretty good description on how to lube it IF it's NOT an XCab. Otherwise, read here:
