a 361 is a big block, but anyway headers and dual straight pipes would be very loud, mines about to loud with flowtech glasspacks on my 390 with 2.5 dual exhaust.
It will sound close to what a stock truck 360 sounds like. It will idle very smooth though. It will not sound real mean if that is what you are asking.
Yes but the stock FT heads flow very poorly and will not make any high end power. A big cam would reduce low end grunt which is the only place it will ever make power. I would look at www.lazercams.com and then look at their 255 degree cam or maybe the 260 degree cam. You will need to find springs that will fit the heads and have the correct pressure. I can't remember what the lift is on the FT cams but they are very small.
They will fit perfect. Then you can get into a little hotter cam. The Crane 343941 would give you a mean sounding idle but it would still have a good low end to it and you shouldn't have any problems with vacuum or driveabvility. The 343901 would even be better on the low end but it wouldn't be very lopey.
One thing to keep in mind though is that a 361 has very low compression. Might go for the smaller 901 cam if you don't plan on changing out the pistons.
