If the PCM doesn't see the ECT come up to operating temperature within a certain time, then an error code will be set. Running anything other than the stock 195 thermostat wil only cause problems, and poorer MPG.

To try an make it work you could try to get a custom chip burned for the computer. It would have to be reprogrammed to accept 160 as normal operating temp. You would also probably want to have the timing advance curve tweeked to optimize running at this temp.
Still 160 seem quite low. I think you might have problems with sludge buildup at that temp.
