You could take the speedo gear out of the t-case and take off the gear then clamp the end of the cable into a high speed power drill, then just keep it rolling till the miles roll over too zero.
O yeah, and it's a violation of federal law too... I'd just write down the mileage when you rebuilt the engine and tranny and keep the odometer at its current reading.
