NoMo is right (aint he always?? ) The headers will make a sound like you discribe because of the thin wall tubing. If you really think you have a leak then a trick I've seen before is to find a shop that has an exhaust sniffer.(like for emmissions testing) Move the "probe" all around the flanges and if it registers CO/HCs then you do have a leak.

I put headers on my V10 and like nomo said there is more sound in headers than the manifolds.I used SCE copper gaskets and so far all is good.I had to retighten a few bolts.Get a light and look at each port, above and below for black soot and you should be able to tell if you have a leak. The bolts that came with my headers were a little on the short side and found a couple of them stripped out.I simply put longer bolts in those and the longer bolt went in and grabbed some new threads and tightened up nicely.
Daryl,
I don't remember what the torque for those bolts was; old timer's disease and all. I did get some hex head header bolts and a set of allen wrenches that would work with my 1/2 inch torque wrench. Made getting to the bolts a lot easier.
