Since a 190 thermostat is stock, it should run at least that at all times.
190 is not "hot" and neither is 210. People who advise you to pull your thermostat or run a 160 because you are "overheating" your engine are misinformed, and are setting you up for problems later, like excessive cylinder wear and sludge buildup.
A properly pressurized cooling system with the correct mix of coolant does not boil until 230 or higher.
