I have a 1998 EB Expy 3.73 with 5.4 and Kenne Bell Super 6psi
Factory tow with Aux oil and transmission cooler,
Specs say can tow up to 7500lb.
Boat weight is 6800lbs at 29 feet with trailer at 1200lbs,

You need an F-350 Supercab, not an Expedition. Too much weight without even counting passengers/equipment you'll have inside the Expedition, or any items you may carry in the boat while trailering. Assuming 10% of the boat/trailer weight on the tongue, you are about 300 lbs. over the factory hitch rating for tongue weight. This setup begs for a weight distribution hitch. Power shold be okay, if the trans can hold up to the double whammy of a supercharger and 4 extra tons to lug around.
I would be nervous about pushing a 6 year-old Expy like this.

I agree with PaulC that sounds like too much weight for an Expy. Launch ramps would make me nervous with that much boat. I recently saw a guy with a 29 footer and a F250 diesel (2wd) get stuck and couldn't get traction on the ramp. We chock the wheels on my buddy's 2002 Expedition while launching when there is any seaweed on the ramp (4500# boat).
You probably already know this, but I wouldn't consider using overdrive at all while towing that boat.
Be careful and please post back how your Expy handles all that weight.
