It depends on if you want an original harness, or you want to go for an aftermarket one with extra circuits for adding things. If you are doing a restoration, the factory harness is the way to go, (in my opinion), If you are doing a resto-mod and do not care about originality, you can go with several of the aftermarket harnesses. For original wiring, O use Bauer Electronics in Oregon, Chris Olsen is the owner and makes EXACT reproduction harnesses. They are not cheap, but they are of high quality. American Autowire, and others, make a cheaper universal kits that you can modify for different after market configurations. Your personal goal will guide you which way to go.

I used Bauer for my 1956 F100 build. He did not have the correct wires for the neutral safety switch. I sent him my old ones and he made me a prefect new replacement. Chris Olson is the owner and he is a great guy.

I've used the Painless and EZWire kits. Both are good quality, but the Painless has more of the little pieces-parts and documentation. They apparently also have better customer support, but I've never used it. If you have experience and don't mind buying extra connectors, etc., the EZWire is a good kit and a bit cheaper.
Painless also has a wire wrap that looks very close to cloth, but it's not cheap: Painless Classic Braid wire-wrap
I have used Painless, EZwire and Quick Wire. The Painless is probably the that i have used but they all are marked pretty well as far as which wire is which. They for the most part follow GM color coding best I remember. I have an AAW classic update harness that we purchased for a Tri-Five project. I have not installed it yet but it looks good quality.
