I have a 2018 F350 Lariat. Recently, it skips songs from Andoid Auto, or changes the radio station while making a right turn. I'm pretty sure it must be a short in the steering wheel control unit. How difficult is it to swap those switches out, Or do I need a new steering wheel itself?
Agree with the above, sounds like the clockspring, some kind of short in the steering wheel controls circuit. It's not difficult to change out, but DOES require an airbag removal. If you're uncomfortable dealing with an explosive device, it may be better to let a professional handle it.
Could that also be causing the truck to start with the towing display as the default no matter how many times I change it?
It will do that after towing a trailer unless you go into the trailer settings and to the select a trailer screen and then select “No active trailer”. Just changing the main screen to something else won’t make it go away for future start ups.

My ‘22 doesn’t do that. Once the trailer is disconnected the truck recognizes that the trailer is no longer connected. I just figured that it was the trailer module doing its thing.

17-19 does it, they fixed it eventually, not sure what year.
My 2017 multifunction switch on the right side of the steering wheel was doing weird stuff and I hit it with the palm of my hand a few times and its been fine for over a year. Had to wack it pretty good. Worth a shot…
