Cut the S terminal wire on the starter, with a switch somewhere.
You could likely get it by the fuse/relay box.
This is the simplest way to deac a vehicle that SHOULDN'T set a CEL.
Other option would be a kill switch on the main power wire to the starter, as that doesn't go through any modules but runs direct from the battery. But then you've either got to hide it in the fenderwell or under the hood somewhere.
At this point though, it's getting to be not worth it - you pay insurance on the thing, let them take it.

I agree with that,Especially since I would make quite a bit of money since I bought it totaled. However, I looked for this truck for months because it is kinda rare, extended cab (didn't want 4 doors to limit length but still room for my tools and such) Red color since most were black or white, not for me. Now i want to start customizing with accessories and it would be very inconvenient for it to go away. I'm looking to get a size bigger tires, etc, etc.

I guess more thought on this... I think it is good enough for the fuel to be shut off so it won't start. So just a hidden toggle switch.
The fuel pump fuse is in the fusebox under the hood. Pinpoint the location of that fuse then unbolt the fusebox and flip it over to find the wire going to that location. Snip that wire to run through your switch.
