How does one tell when the 6.7 is going through regen?
My truck is a 2021 F-350. It has about 30,000 or so miles and I cannot tell when it is doing regen.
Sometimes there is a sound like the engine is over revving but the tach. never changes. This will go on for maybe 15 or so minutes.

You really cannot notice when it happens under normal conditions and that's the way they want it. Some will buy a gauge cluster (Banks i-Dash) to witness the event and some have the factory option to display the status on the screen (check the owners manual). If your not too concerned, drive it and enjoy it.
I lucked out and have the factory "% full filter" as one of the gauges in my bought used 2015, it is useful to drive it while regen is on and get it as cleaned out as possible before shutting it off. It is amazing how long it takes (even at highway speeds) to go from "cleaning exhaust filter" orange light to "95% full". Without this gauge, I think I would be going through regen (and the poor mileage that goes along with it) alot more than I already do.
As mentioned, I cannot tell that my truck (22MY) is in a regen by sound, smell, or any other type of perception. You can look at your instant mpg readout and notice that they have dropped. Other than this, you can turn on OCR via Forscan, which gives you the DPF% screen and the ability to turn Auto Regn on/off. This will give you some control over when the regen occurs, but it is not as simple as turnng it on or off. The truck still has parameters it must meet first. Aside from this, get something like the iDash which gives you the ability to monitor not only regens, but much more, and it will also allow you to see and clear codes too. It's a very handy tool, but that does not mean it is necessary. I love mine though! Here is a screen I have set up for my regens.

This is exactly what I do. I turn auto regen off until the DPF reading on the truck (enabled via ForScan) hits 95% - 100%, then I drive until it’s complete. I have found the regen goes faster at speeds of 35-50 vs freeway speeds. I have a backroads route near my house that takes about 20 minutes to do a regen if the truck is already at operating temp.
I also have a 2022 6.7.I had my dealer turn on the %DPF, and enable the auto gen to be shut off. When it hits 100%, I get a notice on the dash, click the auto regen on, and go for a drive. In 20-25 min % returns to zero, shut off auto regen, and start the process over again.
