I've tried it on my '21' 7.3 years ago and didn't enjoy it at all. I bought the 7.3 for power not fuel economy. If a neutered 7.3 is what you're after should of got the 6.8.
They offer eco mode for those who want to squeeze every drop out of their vehicle when they're on the road. I personally will probably never use it. I have never used it in any other vehicle that has had it.
I went back through some of my posts of eco mode. Here's one from back in '23'.....
"I tried eco mode when I first got the truck and didn't like it. After reading the thread again and new post I figured to try it again. Did 570 miles today, started in eco mode and last all of 30 miles through the mountains it still reminds of a neutered beast just wanting to be unleashed. You guys that can tolerate that.... more underpower to you. For some reason reminds of the '99' 5.4 when I owned that truck.
I bought the 7.3 for its potential power and instead of showing a green leaf they should of put a set ***** with a line through them. "

All kinds of funny chit on the forum today! Thanks for the laugh! My leaf is the same orange/brown color as the low tire pressure indicator that's perpetually on because I run 50/40 PSI for a dramatically smoother ride (when I don't have a load).
I like Eco when cruising empty. It tames down the adaptive cruise control response when a slow car in front of you moves over, and the truck wants to get back up to the set speed. Instead of flooring it at full throttle, it's kinda smooth acceleration. And I like the minty-green dash graphics. I don't know about fuel economy improvement, it seems to me like an imperceptible grade or slight headwind always messes up comparisons anyway.

You can set custom TPMS thresholds with Forscan to make that go away.

This is the best use of eco mode. I refuse to use it anywhere but the highway. And I do see improvement of 1 mpg when using it on longer trips. In the city, my right foot is the eco mode. Lol

Right, that's on my list of stuff to get changed. BUT, it's kind of nice to get the low pressure pop up on the cluster display to see what the pressures are before driving.
I can't say that I really gave the "Eco Mode" a fair chance (in the F150), but I can tell you for sure that the "Sport Mode" will certainly decrease your milage! Keeps those RPMs up high in the power band. Hardly ever use either.
I do use the Tow Mode though. Pulling 8k in my truck rated for 9k is what got me ordering the F250.

I tried Eco Mode for one acceleration from a stop sign on a rural highway in my wife's 2019 F150. I have never used it since. Now, my Power Wagon DID have cylinder deactivation (6.4 Hemi) that did help out on rural highway drives at 60mph or less, but wouldn't activate at higher speeds than that due to the high RPMs it would turn.
Sport mode, though, yes, does decrease mileage...because in everything I've driven that had it, it's a LOT peppier, holds the gears longer, and on the Expedition and Bronco it engages the auto4X4 for better traction...it's quite a bit of fun.
