Odd overheat

Overheating question… 2001, V10, 280k miles. New plugs coil packs FOMOCO thermostat, new ford coolant. New FOMOCO coollant temp sensor Radiator flushed and blown out Reading data off scan gauge. Runs perfect no misses or codes. Pulling a light trailer 2000 lbs, air temp was 80F, coolant temp stayed 195F for 2 hour trip not running air cond. On way back air temp 93-95F, coolant temp started at 190F with air cond on. While traveling temp started creep up slowly.. 200,215 awhile the 225… turned off AC with no change… ot would vary slighty from 225 to 220….about mile from home it went to 235F and would not come down. Dash gauge stayed in middle the whole time until it hit 235 then it went up close to hot. No dash light no limp mode, ran perfect. My next thought is fan clutch? Look like it is the original. I’m not having signs of a head gasket issue. When I bought it few months ago I put in an Oriellys thermostat but didn’t like way it acted.. would be at 180 then go to 210 then back down to 180 while driving, never a steady temp, that’s why I changed to a Ford thermostat. Also this is the first trip with a trailer with the new thermostat, a few trips without a trailer it did fine. Any one have any ideas?
