It may seem counter intuitive, but a 6V harness can electronically handle 12V (The reverse is not true.), so there is no need to specifically seek out a 12V harness unless you want additional features not in the original style.
My fleet is pretty darn original, so I can't specifically comment on your specific selection.
It would be a good option if you're starting from scratch and want all new wiring, and have the skills to install it or the money to pay the labor to someone else. The EZ Wire folks make a good product. It's really not that difficult if you have the time and patience, and can follow basic instruction. Lay it out and make a plan. Take it one circuit at a time, and one section at a time, engine, lights, underdash, etc. .
i have used ez wire, while cheap, we found it to be bloated with extra circuits that never get used, last 5 hot rods , we used painless and american auto wire kits , 9 circuit universal kits, such as this one, since most hot rods only need bare bones https://americanautowire.com/collect...-system-510625
