Bought a 2017 F250 that came tuned and deleted. I am new to the idea and just wondering what equipment I would need to change my settings. I have a few ***** on the dash that I assume control stuff, but there has to be a programmer or tuner I can buy to adjust the settings right?

Did you get anything with the truck? Anything you can plug into the ODB connector under the dash?
If not, you're probably going to have to buy a whole new setup and write over your existing tunes to make any changes.
I didn't get anything. Im looking at a few options just so I can do the tune myself.
You are going to need a tuner... the actual device that interfaces with your truck. Most recommend the EZLynk AutoAgent3.
Then you'll need tunes from a reputable and reliable tune writer. I recommend Giovanni Aliperti with Xtreme Caliber Performance in Canada and get some AMDP tunes.
Then you should be good to go. Not cheap, but the best.

No worries.
The EZLynk plugs into your OBD port on the truck. You connect the EZLynk to your smartphone with bluetooth or a USB-c cable. Then use the Auto Agent app to install tunes.
Depending on what tune package you buy, there will be options for both the engine (ECM) and the transmission (TCM) tuning.
AMDP does have shift on the fly SOTF tunes, but you need a switch, which I think you said you had, but I'm not sure if they're universal or tuner specific.
I bought the lifetime package and just run a single power tune. Currently running the 230hp ECM tune and the raised shift point TCM tune. Love it.

The EZ-Lynk AutoAgent 3 with its required app is more than just a tuner. It acts as a code reader, monitoring system, and allows other changes such as enabling fog lights with high beams and a couple other things.

True. I forgot it does all that stuff too. Can come in handy. I have the Banks iDash gauges, so I don't use Auto Agent, but it's nice to have for a backup.
