Low oil pressure

A couple of months back, my head gasket blew. I got two new heads and put in a bigger cam while I had the heads off. I put everything back together, but now it takes about 5 seconds to start, and the pressure switch on the dash doesn't move until 1500-2000 RPMs. I've got a mechanical gauge in the port by the oil filter, and it's reading 8-10 at idle and goes up to around 30 at 2k RPMs. The only spot I've seen leaking oil is the corner of the oil pan, which I'll have to reseal, but I don't think that will increase the pressure. I've seen people online running 20 PSI idle and also seen that if it's running, it's got enough. Should I look at anything else, or should I just drive it/let it run for a while and see what happens? Added a video of pressure gauge from idle to around 2k rpms

The stock oil pressure gauge is just a 7psi switch. So according to ford anything over 7psi is "normal" and reads normal on the gauge in cluster. Never had actual working low pressure oil gauge on one so not sure what they are known to run at really.
