292 With Various Issues

I got a 61 F600 that I've had for a year or so, and have had it running before, but it ran rough, so I rebuilt the carb, replaced ignition parts, water pump, intake gaskets, exhaust gaskets, thermostat gasket, valve cover gaskets, and adjusted valves. When I first had it going the oil was just old and black, so I changed it. Now I'm trying to set the carb and timing, but can't keep it running under 1100rpm, plus there's coolant getting in the oil. Do I have a blown head gasket now? How do I get the idle to slow down without it dieing?

The HI-IDLE is most likely due to a mis-adjusted linkage/carb/choke (manual?) or a vacuum leak.

If coolant is getting into the oil, possible head/intake gasket(s), front timing cover gasket @ water pump.
