I wonder if anyone has replaced the factory inverter with something better, easy or not?
I was looking into doing that. Victron makes a smaller inverter that will fit in the physical space. However, when I looked at the wiring diagram I see where the truck "knows" the inverter is there so removing it would probably set a DTC at the least, a CEL or something similar at the worst.

went to the pro-power 120vac bed outlets on my 2024 F-450 and no load output is in the pictures below. It was a clean sine wave. This is hot to neutral.
Measured hot to ground and neutral to ground and had strange readings in the 80vac area. I’ll post those tomorrow when the sun comes back up.
Do me a favor and flip the meter to frequency and check it with something plugged into the truck. Your waveform looks like the scope isn't triggering properly and the 78.4 HZ on the display makes me think you may need to send it back for a replacement. I know it is hard to see on my picture but mine reported 59.7 HZ for the freq.
Also - you owe us some more info regarding the 80VAC readings you mentioned above. :-)
