I cut mine out of shower wall material, it’s a moderately flexible white textured plastic that comes in 4x8 sheets. Crew cabs have a two piece headliner, so you can get what you need out of a couple 4x8 sheets. If you don’t like the plain white textured look you can turn it over and glue whatever fabric you choose to it.
Most home improvement stores should have what you need. Is your divider trim present? That stuff is tricky to find.

Tricky thing is that the headliner divider trim snaps in place and attaches to a rolled bead in the truck. It actually supports the headliner in the middle as well. As far as anyone knows it is not reproduced and was only found in ford crew cabs of this era and certain vans.
