On clutches, a larger diameter/more mass clutch will have worse rev characteristics, ie, it will bog down a 302 more than a lighter/smaller diameter. if you dont mind the dig, the slower spin up would be better for pulling things/maintaining speed while driving than a lighter/smaller diameter.
But if you like to zoom around a smalller diameter/lighter assembly probably will let your engine get some revs in quicker

hopefully the others helped illuminate that? it sounds like pressure and material were the differences. Id imagine some clutch materials take "slipping" better for smooth-ness and less harshness, but others are meant to get you moving and may be harsher but wear better
The 07-908 is the heavy duty version of the 07-057.
This means it has a more robust friction material that will handle more heat and the pressure plate has about 20% more clamp, so it will handle more load.
The 07-057 is rated to around 450 ft/lbs of torque.
The 07-908 is rated to around 500 ft/lbs of torque.
I would be cautious of the higher clamping pressure plate. I had a centerforce and HD LuK with extra pressure and they would prematurely wear the throw out bearing and sometimes blow the seal on the newer cheap slave cylinders. So if you go for high pressure be aware that those possibilities exist.
