I have a 1966 truck with no engine...the 240 is long gone and frozen up.....I was able to pick up a 75 carburated 300....miles unknown and while i was hunting for an engine i also found a 92 4.9 efi miles un known...what would be the process in deciding which to install...the EFI doesnt have any computer so i was thinking if I used it I'd convert it to Carb

If you convert the '92 to carb you will have to open the mechanical pump hole in the block or use an electric fuel pump. The '92 heads have more holes to hold the dual exhaust manifolds.
But the '75 head is more reliable and less restrictive.

Run the EFI engine. It's 20yr newer right off the bat and it will have lived more of its life with the benefit of modern lubricants and and an EFI system which doesn't have a propensity to wash the cylinders with fuel like a poorly tuned carb does.
If you're not going to be building it up and doing a bunch of head work (and all the supporting work) the difference in the chamber situation is irrelevant.
