74 360 4wd, just did a tuneup, carb fuel filter, sparkplugs, wires, cap, rotor (needs points done, but switching to electronic, so waiting for that to arrive later this week)
Before the tune, it went into third and kept on going/building power.
Now, I shift into third, and if I'm not super high on the rpm, it wants to fall on it's face a bit until it builds rpms pretty high again.
Quick poke around I felt like maybe it's the fuel pump filter - BUT - why would it start doing that now, but not previously?

I'd check that new filter for flow ... or just try another new one. It wouldn't hurt to just try it with a straight tube in place if it's an inline filter.
Could be an internal blockage or manufacturer's defect not letting enough fuel flow to keep the carburetor float bowl full ... like If say your up already through 1 and 2, say try a gentle throttle for a ways to let the carb float bowl level catch up to full, then mash it in 3rd how does it do?
I assumed a manual transmission. Just looking at what you said you just replaced when it suddenly started falling flat.
If automatic, and it's just falling on it's face as the transmission shifts itself to Drive, could still be same as the carb is running low again.
I had something similar, but mine was also making a popping noise through the exhaust under heavy acceleration. It felt like I had OK power in 2nd gear, but the minute I got to 3rd or 4th, it was falling on its' face.
Mine ended up being an ignition coil that was on it's way out, swapped it over and it worked great.

Mine is a 390 with a points distributor also.
THIS would be great as I've got a new one coming this week
pull the plugs and see if you have any fouling... you could have got a bad plug or wire from the factory or make the mistake many of us have made in not getting every wire to fully seat on a plug or the distributor cap. v8's can run surprisingly smooth down 1 cylinder. i'm not sure i was ever great at hearing a cylinder miss, but pulling plugs or even using an infrared thermometer on the exhaust ports could point you to problem cylinder.
