Everything you just described in your last message points to a clogged radiator. Perhaps there is an issue with it, have you flushed it out?
the radiator is brand new. (about a couple months old )
That doesn't 100% mean it's not clogged up but I haven't seen any other signs of foreign material suspended in the coolant. The old thermostat was clean. Inside of the old hoses are clean too.
I was running a new but very cheap temp sensor from Amazon that might be suspect. Yesterday morning it was reading 130 deg and I hadn't even started the engine yet! (truck was parked in the shade)
I'm going to change that sensor out for the $100 MotorCraft one that I picked up this morning. Hopefully it reads cooler. (and hoping the engine is running cooler than the computer thinks it is...)

I fixed it!
It was the cylinder head temp sensor the whole time.
I'm not sure how I came up with the part number I ordered the 1st time but it was wrong.
I bought another one today at a local parts store. I compared the 2 sensors with an OHM meter and they were way different. The newest one had a lot more resistance.
The lower resistance made the computer "think" it was a lot hotter than it was. It also caused the oil light to come on and threw it into limp mode several times yesterday.
I thought it was odd that the oil light was on but the oil pressure "gauge" in the dash remained at normal.
I put the new sensor in the truck and it runs great. I actually can't get the engine to operating temp! (no thermostat installed)
Tomorrow I'll flush out and refill the coolant system, install the thermostat, and I'm good to go.
