E3 = Eaton model 16244 two speed rear axle, 17,500 lbs capacity, 6.50 / 9.04 ratios
M = Ford 7,000 lb capacity front axle with power steering
23000 = 23,000 lbs GVWR

72 = San Jose District Sales Office
2295 = Special Order Number
All the usual special order items like paint, engine, transmission or axles are filled with regular production codes, so it's either that particular combination ordered, or something else.
Let me know if something doesn't line up. I'm giving you your own thread for this truck for clarity.
As to swapping an automatic, it can be done. The automatics used in these were Allisons. AT540, MT- 643, 650 & 653, MT-40, 42, & 42. 4 and 6 speeds best I can tell.
I do not know which transmission went with what engine. You'll have to dig into that. Plus, if you find one you'd best have it looked at if not gone through.
I'd stick with the 5er if everything is working correctly. Are you familiar with the 2 speed axle?

I want to consider an automatic as I am paralyzed and not sure I want to figure out a hand clutch, hand throttle and brakes are easy. 40ish years ago, long before I got injured, I had a 1960 f-600 with a 5 and a 2 and hauled a lot of fire wood and short logs with it.
