What all can be changed / adjusted in "engineering mode"? Is there anything that can altered that would really screw up the operation of the truck?

Only thing I have ever done is just set the fuel economy bias (AFE Bias) number so the MPG displayed more closely aligns with what the actual MPG is based on at the pump calculation. What else would you want to adjust?

I don't know because I don't know what all is available to be adjusted.
You can't change anything in Dash Eng. Mode.
It just displays information in several different formats.
Decimal, Octal and Hex. with a heading in English.
You need to now what your looking at, in many cases.

How do you change the mpg in engineering mode? I have a 2023 F350 7.3. Computer says 15.8+-. Actual is 12.5+-
Once you have the truck in engineering mode, scroll through until you find "AFE Bias" (I think it means "Actual Fuel Economy" but I'm just guessing). Take the ratio 12.5/15.8 = .791 and change the existing AFE Bias from "000" (1.000) to "791". I accumulated about 2000 miles worth of data, recording actual and calculated MPG before I changed my Bias number.
If you search the web for "Ford AFE Bias" you should be able to find several sources for the procedure. I think there are YouTube videos as well.

AFE Bias can be adjusted. I've done so on 4 F-150's and two Ford Escapes.

In reference to the original post, [Screw up my truck], there is nothing in the engineering mode that will do that.
Yes the fuel mileage bias can be changed.
Some data displays can be changed to suit convention, but that is about it.
Sorry for the misinterpretation of meaning.
