You get more money selling outright. With a dealer, they have to make things safe. As a private party it is "As IS" and you will sign that or we don't do business. I allow you to check it to your heart's content but once the deal is done, I don't know you and there are no refunds, "taksies backsies" or any deals. That said, you are right. You have to earn your extra by dealing with the flakes and low ballers. What is your time and LACK OF AGGRAVATION worth?

Cashiers check? Those can be faked.
Stand behind customer at his bank while the cashier's check is made out?

Wire transfer to a bank account? I would set up an account that doesn't have more than $10 for that sort of thing
