Don't know for sure, but by '71 I would think that all would be adjustable and self-adjusting.
Following along to see what others with knowledge say about it.
Personally, I would just try adjusting them and see what you get. As far as I know you can't hurt it unless the adjuster will go all the way out and the two halves part company.
Other than that, it's hard to go wrong by experimenting. The truth should come out pretty quickly.
To tighten the shoes the end of the tool goes down on all 4 wheels. I usually tighten until I cannot move the wheel then back off 10 clicks. Sometimes after test driving they need to be re adjusted if the pedal is too low.
Before self adjusting brakes the adjustment was the opposite. Tool pries up to tighten and down to loosen.
Working at my Dad’s shop the first time I did a brake job on a 62 Ford with self adjusting brakes it took me about a 1/2 hour to reassemble the first wheel before I finally figured it out.

I had read that if you have self adjusters that if you tighten them to much they can not turn back as they have locking notches. Is this a bunch of CR**? Can my 1971 star adjusters be turned both ways to get the adjustment correct. What about this Kenny? and others.
Kenny's right. My bad. I went and looked at my truck and it seems that both adjusting screws are for the rear left when there side specific. My self adjuster on the driver side wasn't working.
If, for some reason, the notches are so precise that it doesn’t want to turn in the loosening direction, you can take a second tool, such as a small screwdriver, and push the star ratchet plate slightly away and out of engagement with the star wheel.
At that point, you can turn the wheel without resistance in either direction.
I guess I "dare to be different". On adjusting drum brakes, I adjust out until I can only spin the tire, with both hands, one revolution. Both sides being equal. This way I only have to adjust out.
