Long answer: Payload is determined by subtracting the trucks empty weight (with driver and full fuel tanks) from it's gross vehicle weight rating.
Your door tag will specify what your GVWR is.
You empty-weight will very depending on your trucks configuration (2wd vs 4wd, long bed vs short bed, auto vs manual). A certified truck scale will charge you ~$12 to put your truck on their scales and get an real empty weight.
