I presume you are talking about diesel engines Diesel engines in the 250 or bigger trucks?
Since the engines you are inquiring about span at least 10 years of trucks, you may want to consider taking your question to the Diesel forums. There you'll find a section called "General Diesel Discussion". Post it there. I think you'll probably get more responses than you might anticipate.

My fast answer:
7.3 is great, but less power and becoming rare
6.7 is the new great, depending on year etc. they have a few more issues than 7.3s but overall seem to be doing well in the world
6.0 bulletproofed not bad, or in detuned platforms they seemed to do okay
6.4 I'd stay away from unless you want to have a new hobby

most importantly have you had this discussion with your mechanic? or will you be maintaining/repairing on your own??
Nimbus, get a 7.3 PowerStroke. There are plenty of 6.7s out there, but they are newer and cost more, and have a whole lot more electronics and sensors. I wouldn't take a 6.0 or a 6.4 if you gave them to me. DF
