removing A/C components
Eric....depending on where you live....if it works, I would keep it. The compressor should only run when you actually have it on "A/C" and maybe defrost (it did on my old VW Jetta). I would think that the power loss with the compressor not running would be negligible.
SHould you proceed with removal, its not too bad. Take the glove box liner out, and the duct that goes to the passenger vent, and you should have room to work. There are a couple of nuts up on the top that are hard to see. Just feel around a bit, you'll find them.
With the overheating...do you have a clutch fan? How about a low profile flex fan?
I had a heavy duty flex fan and my truck sounded like a Cessna roaring down the road. I swapped it out for a low profile flex fan (all I could afford at the time), and my truck is fine until I hit traffic.
