I towed 555 miles from San Diego to Parker AZ then back. Outbound I8 over the mountains and inbound I10 through San Bernadino. Outbound MPG 15.7, Inbound 15.1. Running 55-60 MPH at extreme heat both ways ~115-120. Strong winds on return leg. Trailer weight <7K
On the outbound we lost the air conditioner compressor the last 40 miles. On arrival the temp was 124. Brutal heat. Hats off to Parker Ford for sourcing and replacing the compressor before the return leg.
Calculated MPG or off the dash readout?
I don't know how to run 55-60 on the interstate, can barely manage it on small two-lane roads!
Off the dash, I don't have the inclination to manually track and calculate. CA has a 55MPH limit when towing and I use adaptive cruise to keep myself from creeping up to the 65 MPH speed limit.

I've pulled my trailer all over Ca and very rarely find someone pulling at 55, especially on a multi-lane freeway. If you're pulling 55 on the interstate, you're pissing a lot of folks off, even the truckers.

Yep. My general rule is to follow the speed of the truckers, when towing. When using adaptive I follow their speed. By and large it is in the 55-60 range with some running over that. That is exactly what the trucks were running in both directions last week.
On the flip side I get pissed when I see people towing fast with the trailer swishing back and forth and in an unsafe manner. It's like all the little 4 banger zippy cars, driven by overloaded testosterone d*ickheads, weaving in and out of traffic at 90 plus MPH. Not enough brains behind the wheel.
The key is to drive safely with your rig. If I stay off adaptive my speed climbs up to the 65 range easily. I also detest speeding tickets and I sure saw a lot of highway patrol over the last week on the state and interstates.
