You pick the time, I'll pick the place.
Off-road or not, the thing is pulling hard.
The hurdles to 80+mph are tranny (and brakes and suspension if not on a closed, flat course). I'll race you through 1 gear for sure.

I'm no expert on this but a few thoughts to add on to the gas line routing for fuel injection. For the return line to the tank run a tube down to near the bottom of the tank so the returning gas goes into liquid and does not spray into the tank creating more vapor/fumes. My vent line goes almost to the top of the cab. I'm running a small surge tank down on the frame to avoid sucking any air when the tank is almost empty. A low pressure electric pumps pulls fuel from the main tank, fills the surge tank, and the surge tank overflows back to the main tank. The surge tank is sealed, fuel in the bottom and overflow out the top, the low pressure pump runs all the time keeping the surge tank filled with fuel, no air. If the low pressure pump pulls any air because of low fuel in the main tank, cornering, off camber, etc., it rises to the top of the surge tank and goes back to the main tank. The surge tank has a Bosch high pressure submersible pump in it that feeds the fuel injection and also a return line from the efi fuel rail.

This type works for me. I get a bit of gas smell on a full tank going around a corner - but its not leaking gas - just fumes coming through the vent it seems. I fill it until it clicks.
I cleaned up all the inside stuff as well - I was getting a lot of gas smell from an older fuel level sending unit.
This is what I use as well. Works very well. No leaks, fits tight.
