If you are still losing oil and the adverse conditions are not improving, ignore my response about the TPS and follow the advice of the others with focus on injector o-rings.
After putting 10 1/2 quarts of oil in I had oil on the dipstick.
If you had to put that much oil in it, that means they treated your truck like a regular gas car and only put 5-6 quarts in it. Surprised it started at all.

Yeah, I don't think it would have started. I'm more thinking it went somewhere then it quit.

several years ago before a trip I checked the oil in my excursion, nothing touching the dip stick. Drove it up to the garage and added 12 quarts of oil to get it to the full mark.
put 6 gallons in tbe back and left for our 300 mile trip. Get there and it was still on the full mark. To thus day it hasn't done that again. I never fixed anything.
Hey guys I just got back from a trip from filling up my truck with fuel and driving round trip about 60 miles to my hunting property. I shut of my truck off several times and it started back up right away!!! You guys were absolutely right!!!! I don't know how to thank you guys enough for your knowledge and support through this horrible situation, I was literally panicking thinking tthey had ruined my 7.3. The truck ran great. Again thank you all !!!!!!!!!! p.s. I have 0 EBP with new sensor and pipe. Always something.......
The shop never did the oil and filter change in the first place ... The manager of the shop took full responsibility for the guys not doing the service so he has my truck.
If they didn't do anything they didn't break anything.
Most of these that I've had die due to loss of oil were about 9-10 qts low. Thats pretty close to how much you added.
You would have seen an external leak by now.
Grab a couple gallons of oil and take a long drive, as suggested above. See if driveability improves and recheck your oil.

Im leaning toward something like this. It finally shut off due to HOT and aerated oil from being low. Slow start was due to air in HPO system.
My experience is it takes 2.5gals low to shut down during an active leak (injector o-rings or external HPO leak, etc)
In addition to the question SSJ asked below, make sure you get your key back from them!
Disregard the comment strikethrough above... Mark reminded me the keys were in the ignition.

That's great news, fortunately these trucks will shut down when they get low on oil, preventing any catastrophic failure. Did you ever figure out if the "mechanic" did any kind of oil change at all? Maybe as someone mentioned earlier they put in enough oil for a gas engine but not the diesel? If not the oil had to go somewhere so probably a good idea to keep an eye on the dip stick.
To play devils advocate, the shop is going to claim that since you took it without our ( fill in the excuse ) we are no longer responsible for any issues.
Yeah the manager called me yesterday around 11 a.m. and asked if I had picked up the truck. I couldn't help myself so I played him for a little while saying that I thought they had taken it to a 7.3 mechanic. He said that the person that was supposed to take it got sick so they couldn't. I then asked how I would have taken it if they had the key inside the building and the truck locked. He told me that they left the vehicles in the lot unlocked so that the windows would not get broken if someone wanted to steal somethhing out of them. I guess they would rather someone steal the vehicle without a broken window!!!!!! I finally told him that I got the truck and that I wanted the $ 170 that they had charged for the service that they didn't do and that I would never darken their doorway again. He agreed and cut me a check.I deposited the check this morning. Thanks to you guys I will never have to deal with these guys again!!!!
