I changed oil in my 1975 F100 with the 300 engine. It is supposed to hold 6 quarts and I have put in 5 and it reads way over the full line. I know it has 5 quarts because I have pulled the oil pan and drained all of the oil. I am not sure if I have the right dipstick. The number on it is C5TE-6570-C. It says to use SE101-C oil. Doesn't the C5 mean it is for a 1965?
C5 means that it was designed/engineered in 1965. It does not mean it is from a 1965 truck exclusively. It could have been used in any truck in the years following 1965 as well.
The oil filter holds a lot of oil. If you didn't fill it prior to installing it (you should), then your dipstick will read lower after the engine has been run.
Yes, I put a new filter on and put in 5 quarts of oil. I have one quart remaining to put in. I ran it and let it sit and it reads about a quart over the full mark. It should read a quart below. So, going by the reading on the dipstick, I have 7 quarts in the pan.

Hmmm, I don't know then. Look at the dipstick tube. If it has been altered or swapped, then your dipstick could be going farther down that it should.
I admit it would bother me too, and I would try to find another like truck to compare oil pans, dipsticks, and dipstick tubes with. But I don't think you have anything to worry about. If you've got the right oil pan, then for now I'd pour in the amount of oil that the owner's manual specifies.
