Just noticed this issue today on my '02 Limited. Down here (Miami) it is ungodly hot, and my excursion sits outside on a brick driveway. First minute or two the A/C runs it is ambient, then it 'kicks in'. Once it is going, it's ice cold.
I'm right at .025" Clutch engages and disengages cleanly with the flip of the switch, so I'm just going to chalk this up to a couple really really hot days. Also it's hella pita to reach on the V-10. I haven't driven it in 4-5 months, so it isn't like something I noticed after driving it everyday. Had to swap out a battery because it sat so long, but 3 years is all you get down here in any case. I only notice it when I start it in a parking lot let's say, and it doesn't seem to be cooling but when I hit the road and the rpms come up it 'kicks in'. Or maybe it just needs a few minutes to cool down the hot ductwork before it can 'feel' cold out the vents.

That's the way my 01 F250 behaves. I can tell the compressor is running but it has some work to do before it really makes a hugely noticeable difference in the vent outlet temps.

Are you opening the rear cargo windows to help get the hot air out. The A/C air supply from the front will push the hot air out the back. This really helps our Excursion during these hot humid summer days in Houston.

Sounds like the small delay is normal, it takes a min for the compressor to pump the refrigerant vapor to the condenser where it condenses to a liquid, and is then able to meter as a liquid through the strainer/orifice then boiling off to a vapor absorbing the heat passing through the evap coil.
