Looking at getting some gauges for my 2000. I started pricing things out and it seems that the edge cts3 monitor is the best bang for the buck. Will the EAS starter kit and egg probe be all I need to monitor everything? Does it monitor HPOP pressure and fuel pressure as well? Would I need additional harnesses? Any help is appreciated!

If you've got that kind of coin to drop and it's going to make you happy then by all means grab the CTS...I don't think you'll come out disappointed...
If you'd prefer save a little coin, then you can monitor all the PID's the CTS can with an
(there are also some other less expensive options just check out any number of prior threads on OBDII scanners) and the TorquePro or FORScanLite apps on your smartphone...
Then you can add boost/fuel/egt via a Glowshift 3in1 0-60 Boost with EGT and Fuel (there are other options if you prefer the analog for EGT)... all you'll need is a handy AIH Delete Plug from RiffRaff and you'll be all set for under $300.
Again, the CTS, or the ISSPro are all great options too, I wanted something economical, low key, and that took advantage of the free PID monitoring built into the PCM.
This is a little over $200 Android head unit running a different program than FORscan Lite. With FSL you can monitor EVERY PID the truck has, read and clear codes, perform on-board diagnostic tests like BuzzTest, CCT, KOEO, etc. The truck does not measure EGT or fuel pressure, so you’ll need to add those gauges separately.
You can also have back up camera, dash cam, google maps or one of 100’s of other GPS apps. It’s a step closer to 2021 technology for our old trucks.

I am not saying this is your solution, that is up to you to figure out. But, I went with dedicated FP, boost and EGT (ZF6) gauges on the pillar. Then, because I don't like tablets, phones, screens or distractions in my face, I installed an Android head unit that runs FORScan Lite with the touch of a single button.

^^^ These are my "typical" gauges I run when I want to see what the PCM is seeing. I don't normally run these gauges, but if I want to I can have them up and going in ~2 seconds. No need for constant monitoring or anything silly and unsafe. Just there if I want/need them.
Having the onboard virtual gauges via the Android head unit allows me to create videos such as this one where I can diagnose, dissect or monitor what the PCM is doing/seeing from the comfort of my home.
CTS3 for the win! Spend the money and do it right. Have mine with the dash mount. Then added the egt and fuel pressure sensors and I love it. Had the old cts2 and the the 3 is a lot nicer/more responsible.
Easy plug and play right away and then the expandability to add other sensors is what sold me. Being able to switch up my screen with the colors I want, warnings I want, the alerts, the layout. Everything. Analog gauges have their place. Having to run all the wires is one thing. But decide you want to monitor something else, and you already don’t have room on your gauge pod. The cts3 has a sh$t ton of values to monitor. More so than I thought, some features obviously not available on our trucks. But you have the ability of the gauges, warning system, data logging,clearing codes, etc. etc.Win for me.
I was in a similar predicament and was going to go with the CTS 2, but then I realized that the cumulative cost was:
300ish for a used CTS
130 for a the EGT addon
150 for the fuel pressure sensor
170 dollars for the wiring adapter so you can plug the pressure sensor in to the CTS
That just seemed a silly amount of money for what I was getting, so I decided on analog gauges for boost, fuel pressure, and EGT, while using an inexpensive tablet for everything else.
