Sounds like you got taken for several tricks in their book. But don’t despair. Take all the sound advice given here, cancel if you can, refinance after a few payments make it on your credit report, and learn from your mistakes. Don’t give up, because you are likely to hit some bumps trying to get your d$ugh back. My wife and I let something similar happen to us when we were just married and about your age. We learned from what we now know wasn’t a life destroying error, and never made it again. Our second purchase was much more educated, and every purchase since been a little better.
You know what was weird too, when the sales rep handed me the owners manual, they came in a yellow envelop without the ford sealed booklet and i didn't have a brochure about my warranty. I had to learn about the warranty threw fords website

You don't need to give them any explanation other than you decided you don't want it.
Just be firm and don't listen to them trying to talk you out of it.

Your state may have additional rules on purchases like this, that allows you can cancel after x number of days. This would likely override any cancellation requirements in the contract.
With regard the road hazard plan, you're young, those tires won't last three years anyhow.

I wouldn't take his word on anything. Read the writing. It covers repair or replacement of a tire(s) that is still within its usable treadwear limit. Meaning if it gets a nail in it and is repairable, they repair it. A tire repair around here is around $20-30. Have you ever owned a vehicle with a tire that has been damaged by a road hazard that was not repairable? I have not, but if you have it might be worth the $249.

Just tell them to remove it, you don't need a reason. I would never tell a dealer anything I plan to do to a truck, especially if it is heavy modifications. Just tell them you don't want it, and leave it at that.

Type up a cancellation notice on your computer and print two copies out. Include contract #, vin #, date, etc etc. Take two copies with you, see if you can get them to sign one that you keep or have a witness with you. If it is not in writing they can deny you ever asked. Not that I don't trust them, but just sayin........
If you want a ESP, follow the advise and research the on line dealers. I never used to buy these, but with all the new electronics, LED's, etc I do now. I use Flood Ford. When I bought our Explorer, I was ready for the finance guy. He started talking ESP and I handed him the Flood Ford brochure and asked if he could match it; he did. I would never consider anything other than the official Ford warranty.
Don't feel bad about this, just learn from it. All the advice you are getting is coming from experience; we've all been there.
