Found a nice looking 2008 lariat 6.4 on a used car lot... here is what I know:
163k miles
Previous owner was a farmer
Carfax comes back clean... actually has alot of services on record
egr/dpf deleted, found a dpf+r tuner rolling around under the back seat
No lights on dash
Starts up just like every other 6.4 i ever heard... and it had been sitting there for a week untouched
Air bags in the rear
B+W flippable gooseneck ball
18k asking price, but its been sitting there a while, I plan to haggle

Most of the miles I put on this truck will be with 3-7k hooked up to it.
What should I look at on this truck before i pull the trigger? Is there any reliability concerns with this truck, seeing as its deleted? Also, what should I do on the test drive to ensure its in working order?

I have no actual experience with these trucks. I have friend that had one and he absolutely loved it and hauled with it a lot but it was in the shop a lot and last year he said the motor went kaputt, no details but he said it's screwed and he's thinking of swapping a 12 valve in.
I had always thought that the 6.4 was worse than the 6.0 but like I said I have no experience with either of those two engines. I skipped from the 7.3 to the 6.7 because I had been scared off by all of the stories about these motors.
You should never buy anything from a farmer. Never. Also you should do some research into the 6.4. It's a 100,000 mile engine at best. Nobody wants these things.
If you're towing less than 10k you would be just fine with a gasser. Gas is cheap and maintenance is cheap. Diesel maintenance is crazy expensive.
Look for a gasser without a triton. Every triton will need spark plugs and cam phasers right off the bat and that can cost $1,500+.
Just talked to a guy with an '09 6.4 yesterday. He's currently on engine #3 which has a bent exhaust valve, massive blowby (drips/burns a gallon of oil a week), and the truck has 150K miles. He bought it at 130K with it's 2nd engine and just had both turbos replaced (chasing the oil consumption problem) This current engine replacement is estimated to cost $13K (includes 30 hours labor), and the $5K engine warranty he bought just expired. I know theres people that hate them and others that love them... I was just crossing my fingers because I drive a 6.4 at work and have had 60k trouble free miles so far.

Also, why should I not purchase a used vehicle from a farmer? Would it indicate being abuse even though its been maintained?

Gas is always cheaper than diesel though. Diesel was nuts when Obama was in office. I expect it to rise again when "the big man" takes over. My 5.4 gets 10 mpg unloaded but gas is only $1.75 a gallon here. It was $1.25 for a short time last year. Diesel is like $2.30 here.

true, I am aware how bad equipment can be used... I do work for the county after all haha
considering the interior is in such good shape, as well as the exterior, I would reckon it isn't too terribly abused... besides I would just abuse it myself because I will be working it.
Anyway, the guy at the used car lot says it was a trade in, the guy went to a newer model. I'd go so far as to say there's nothing mechanically wrong with it... but I cannot be sure, which is why I would have it checked by a diesel mechanic.
