It really depends on your comfort level for basic daily driving. I have mine at 72 psi year round, including plowing and towing.
I alter my pressure depending on the load, I'm 285 over the stock 265. You can do the caulk test across the width and see the dispersion over a short distance, or use a tire depth gauge to see how the tread is wearing longer term. I never did well with the caulk so I take a little latex paint and swipe it just on the top of the tread with a rag, then let it dry. I've seen some people take a shipping adhesive label and put it across, then watch the contact wear of the paper in short order.
I'll be down to 65psi at the rear running empty, but up to the door rating with loads.
I also have 285s. I'm running an 8 ply tire so I run them at the max 65 psi. When I had 10 plys I ran 70 psi in front all times backs at 70 unless towing then went to 80 got 55k miles out of a set of Firestone destination a\t

if they are that oversised , as you write, safe pressure can even be 30 psi.
I am able to calculate it for you, but need more information.
easyest are the GAWR'S , GVWR, empty weight, max speed you use( and wont go over for even a minute.
Then from tires, but some is given already.
1 maxload or loadindex (googled and found 125R)
2 loadrange ( your E = 80 psi for maxload)
3 speedcode, if you can find it. ( R is 170kmph/106mph)
also yudge if tires are ofroad( isch) with larger profile-blocks that cover part of sidewall( saw those agressiv profile-blocks that cover part sidewall )

Thanks to all for the advice about my oversized tires...I think the bottom line is: do not inflate to the max 80PSi; rather use a moderate PSI of 55-72PSI when everyday driving without a load.
