Looking for diff oil recommendations? I know there is a lot of synthetic oils out now, what weight is recommend for our trucks? I have dana 60's front and back?
Also, what is everyone using to de-grease the covers for painting?
80-90 of your choice. I don't use synthetics much because they're a great leak promoter but they're good if you don't mind it. if you have trac lock add a friction modifier .
I use a wire brush on the grinder then bead blast the covers while they're off to clean them. but if you don't have those things any degreaser works better than nothing.

I don't have the Ford books for '78. The '76 books ask for Hypoid Gear Lubricant meeting Ford specification ESW-M2C105-A (part number C6AZ-19580-B or E) for the Dana axles. If limited slip Dana, add 4 oz. of EST-M2C118-A (friction modifier part number C8AZ-19B546-A). I believe the one I used was SAE 90.
For the valve covers: Mine did not have any heavy deposits, so I washed them in diesel, wiped them down with some mineral spirits, straightened any distortions, then painted them with some gloss oil based paint.
