my ford-F-250, 03, 7.3 is a little jerky and don’t feel safe to drive it. The highway is right outside my neighborhood and this morning when I was trying to take it to work I got to 60mph and cuts in and out with acceleration having a small jerk to it. After a couple seconds the engine light came on. Any thoughts one what it could be and/or how to fix it?

Seriously, you need to pull the codes with the CEL being on before any diagnosis can be done.
It can be one of MANY THINGS that is causing your issue. It's not worth asking people to guess when you've provided zero details. Get the codes read (AutoZone is NOT reading codes due to the virus) and report back.
