first "fill" from the dealer lasted about 5500 before the 500 mile warning came on (80 daily use and 20% towing out ~4k camper), current tank is at 4K and showing just under 1/2, a bit more towing this time around (same camper).
I just turned 13k miles and have about 3/8 left of my second tank since buying it new last January. Comes out to be close to 1100 miles per gallon of DEF. Only thing I've towed is the biggest U-haul trailer they have for about 150 miles or so back and forth when I moved. Tank wasn't completely empty when I filled it back up though so my math may be a bit conservative.
My 2017 f350 when brand new was amazing on def. It burnt maybe 3/4 of the def tank in 7000 miles most of which was towing a 30 foot toy hauler. After that, the consumption went way way up, even when not towing. No idea why I was very annoyed. Deleted the def after that.

That does seem a bit more than average. Maybe see how it does until it requires a refill again. I just had mine topped up as it had a half tank left, this was after driving roughly 12,000 km's (approx. 7,400 miles), with around 3,000 km's towing our travel trailer. I am quite happy with how little DEF my truck has been using. Most of my driving when not towing is highway, as we live out in the country.
