I wouldn’t touch the head gaskets. I would intstall new stainless injector cups from riff Raff for starters. New front and rear main seals along with resealing the oil pan. New water pump and oil cooler. Flush the block. Paint and clean what is needed. Also if your staying with the stock turbo i would recommend a new set of bellowed up-pipes. Check exhaust manifolds for leaks and address. And if funds allow I would do a new hpop and maybe valve springs as they can lose strength with there old age. Other then fresh injectors and glow plugs you should have a happy and healthy running 7.3.

Oh and I would so a set of welded oil nozzles since the pan will be off

I see you removed the fan, fan clutch, oil fill tube, turbo and maybe pedestal. Perhaps this is where you make up the space to get the engine out of the truck instead of removing any of the exchangers and bumper?
I remove turbo, pedestal and up-pipes. The AC compressor gets placed in the battery tray and the condenser will stay in place. The PS pump and bracket remain in the truck - no need to unhook any of this (but replacing the pressure hose as PM after you’re done is not a bad idea). Remove fan/clutch, radiator and CAC. Up and over the header panel, grill, etc. You’ll have to rotate the engine to get out/in.

In my time lapse video, I ran out of headroom to go high enough with hoist because I was under the garage door (not my usual habit...) - and had to remove the header panel at the last minute.

I would never change a rear main seal as PM. Just like oil pan, they very seldom ever leak if unmolested.
