Maybe I don't have a good enough imagination, but I can't imagine a diff letting loose while the vehicle is parked but still working when driving.
With one titre on ice an open diff will let the other tire roll while the tire on ice spins backward. But we've ruled out ice.
So it seems to me that it has to me the transfer case going into neutral or the transmission park pawls not holding. And although there may have been an issue with the transfer case shifting on its own under certain situations, it seems unlikely to me that this would happen with the key off so the shift motor shouldn't be getting power. I certainly can't rule out the transfer case completely, but I think the trans is a much better bet.

I admit even I’m having a hard time figuring how the diff would be responsible, but when it comes to diagnosis, it’s important to look at the system as a whole and not rule anything out until it’s been inspected and tested. It happens a lot on these boards where a thread drags on for weeks or months and the end result turned out to be something that was totally overlooked or ignored from the start.
Although it’s not the first thing I’m inclined to look at either, suggesting the OP parks on an incline and watches for the driveshaft to turn is a simple way to rule it out.
